How do you find out which Windows version you have? I think mine is 6.1.
And if that's true... what kind of shells, themes, and such can I use?

Start - settings - system - about

That's where you'll find if you have 6.5 or 6.1

If you've never flashed your phone, you'll have 6.1

You can use a lot of things. check out http://omnia.modaco.com for some inspirations.

From the top of my head:
Pointui
Wisbar
manilla 2D
SPB mobile shell
etc...
